In 1947, our grandparents, Gerhardt and Esther Schmidt began their journey towards the American dream. Gerhardt, working as a meat cutter, was inspired by Esther to start his own business. They found a local butcher shop for sale but couldn't afford it. A kind recommendation led them to a farmer in town who, not wanting to lose the butcher shop, loaned them the money with a handshake.

On Friday, July 13, 1947, Schmidt's Meat Market opened its doors. Over the years, Gerhardt and Esther built a reputation for unwavering quality, family service, and incredible flavor, especially their unique German smokehouse flavor.

Baby Back ribs are my favorite meat to smoke on the Green Egg. Trying different rubs and sauces is the fun part of smoking meat. I tried The Good Schmidt’s Kansas Schmidty sauce and now it’s my favorite. However, I had to try the other 2 flavors and now I have 3 favorites. Take my word for it and try some.

I sampled the Schmidt Kickin’ Chipotle at Schmidt’s Meat Market and was warned it had a kick, to which I was dubious as spicy kicks are largely overrated in my experience. I tell ya though…she was right. Not that it was much for me but on a scale of the average eater, this was spicy and wonderful. Also turns out she was the granddaughter of the founder! So lovely to see family run businesses still actively participated in by the current generation.
